I know this is silly, but I am moving away from the Mac ecosystem and I’m wondering whether anyone has ever tried and managed to run MimoLive from a virtualised installation of iOS on Windows.

I assume you mean OS X and not iOS.
I’ve never tried this but I suspect you will run into problems with both graphics and sound drivers. Virtualized environments were never designed to do sound “well” and they do video (as in motion graphics) pretty badly too.
